I have a 7 channel home theater. Can I connect my 360 to my onkyo reciever without connecting to my plasma from the xbox.

Does your receiver have HDMI inputs and output? If so, that should work.

It does have hdmi but all are being used. It has a seperate slot for gaming which uses two audio rca plugs and one video. The issue is I dont want to run cables up to the tv as it is mounted on the wall high above the fireplace.

Have you looked at an HDMI switchbox? I think Oppo has one. There are probably others.

sure, the high definition (component) cable you can buy or...on  some versions of the 360 come with... has an optical out in the base of the connector the 360 plug that can go to your stereo optical
