"Traditional" Digital Outs on Blu-Ray and HD-DVD

When I get a new Blu-Ray or HD-DVD player I want to output a stereo digital stream to my DAC which can accept signals up to 24/192 (with Coax/BNC/AES BEU inputs). I don't do surround sound.

Is it possible to get a high-resolution signal from the new players with Coax out, or do they all downsample?

I know many do not yet support the lossless codecs, and it looks like it may only go through the HDMI anyways. Since there appears to be only one HDMI out on the new players (none for an audio output), I guess they are all assuming we will run them through a processor/receiver.

Also, have I heard right that these HDMI only players will not output a digital signal to my DVI input Sony RPTV, even with a DVI adapter/connector? I want play movies in 720P on my TV.
