I just received a Logitech Touch and per the review in Abolute Sound, I want to transfer music in my itunes main library to a 16gb memory stick rather than have my entire library. Please excuse my ignorance but I just cannot figure it out!
To use music files in the Touch you only need to put them on the USB stick, plug it into the back of the Touch, and wait a bit for the Touch's internal server program to boot and you're on your way.
On a Mac to put files on your USB memory stick you have to plug the stick into a USB slot, wait for it to appear on the desktop and then drag and drop music files (which are located in the iTunes music folder) into the USB stick.
If the stick doesn't show up on your desktop it may need to formatted first. On a Mac you do this with the disk utility program. The stick must be formatted in FAT 32 to be read by the Touch. If you use a Mac OS format the Touch will not recognize it.
If you are using a PC I can't give you specific instructions other than to say it will be very similar to a Mac but not as intuitive. :)
